    Hey, Gary-
    We met 12 years ago in Chicago at the Seibel Institute when you were still there. We have been making spirits now for about 11 years and I have run into something unseen until now- wondering if we might hire you to help us figure out what it is. Our vodka has thrown a very fine sediment clinging to the sides of some bottles, and we have only theories as to why. We have been using proof-down water directly from our well with no filtration. But recently we were made aware of some nitrate levels creeping up in the ground water (we are very near to some heavy agricultural use areas). We wondered if nitrates could be causing this sedimentation… We filter before bottling to 1 micron, but just rinse bottles with the well water. Can we send you a couple of bottles to help us solve this situation? Any comment and recommendations would be welcome, as well as some idea of the fee schedule for testing.
